Yes, Go over to the Destinations board. You will see it above you on the screen, to the right. Find out from someone posting, a cool sounding excursion. Then, just Google the name of the place. It takes a little research, but that can be fun.
You CAN wait until you get on the ship and book at the desk.. I think there is an upcharge when you book on the ship but if you don't want to do the research it's a small price to pay.
