We are cruising on this new ship. We booked a Jr Suite on the right side (I think thats Starboard?). Is that the best side for this cruise itinerary to see the coast line from our room as we cruise?

Yes starboard is the right side of the ship. We have not sailed this itinerary but starboard should be the coastal as you sail west. Often the ship may be too far out to see the coast line but you might see twinkly lights.
